A curried spinach and camote dinner is relatively easy to prepare. If you come home from work or work form home and are hungry, you can have this dish ready in just a few minutes. Plus, it is excellent for people who are trying to lose fat or build muscle.
Camote does not carry the same kind of starch as bread or even white rice. It is a complex carbohydrate source, so the it helps to prevent your blood sugar level from spiking. This means that it is good for people who have diabetes. The process of preparing the meal is fairly simple.
Peel the delicious, sweet camote and add them to boiling water. Boil them until they are cooked. Make sure that you add a little salt to the water to taste. You can also add string beans, turnips and other vegetables.
Chop the spinach and steam it until it par cooked. Cut up your seasonings, such as onions, escallions or leeks, scotch bonnet pepper and tomatoes. Fry the seasonings in coconut oil and add your curry base and the spinach. Allow everything to simmer for a while but watch it to make sure it is not overcooked. Serve your curried spinach with the camote.
